Potassium Carbonate for Raisin Drying: A Practical Guide for Grape Processors

Why raisin processors dip grapes in a potassium carbonate and oil emulsion, which grade to buy, how it is packed and how to order 25 kg bags delivered in Afghanistan.

Grapes have a waxy skin that holds moisture in. Left alone, they can take weeks to dry in the sun and often darken along the way. For generations, raisin makers have solved this with an alkaline dip: a solution of potassium carbonate (K2CO3) mixed with a small amount of oil. It is one of the most frequent requests our Kabul trade desk receives from dried fruit processors.

What the dip actually does

The potassium carbonate and oil emulsion breaks down the wax layer on the grape skin, so water can escape much faster. Drying time drops sharply, and because the fruit spends less time exposed, processors can produce the lighter golden, green and sultana-style raisins that buyers in many markets prefer.

Which grade to buy

  • Food-grade potassium carbonate, 99% minimum purity, as a white granular or powder — the grade for any product people will eat.
  • Technical-grade potassium carbonate is for glass, detergent and industrial uses. Do not use it on food.
  • Raisin dipping oil — a food-grade emulsifiable oil (commonly ethyl oleate based) mixed into the carbonate solution.
  • Supporting chemicals often ordered together: sodium metabisulphite and food-grade sulphur for colour retention, and potassium sorbate as a preservative.

Packing, storage and safety

We supply potassium carbonate in 25 kg lined bags. It absorbs moisture from the air, so keep bags sealed, off the floor and in a dry store. It is alkaline: workers mixing the dip should wear gloves and eye protection. Every lot ships with a certificate of analysis and a safety data sheet (MSDS).

Other uses of potassium carbonate

The same food-grade material is used to alkalise cocoa, in noodle and kansui blends, and as an acidity regulator in bakery. Buyers from these sectors often order it alongside citric acid, sodium bicarbonate and phosphates.
